On our tour, The Avenue of the Volcanoes, in Cuenca we visit El Cajas National Park, it is only 30 minutes from Cuenca on the road to Guayaquil. You can stop at a parking lot at the side of the road, where you have an impressive view of La Toreadora Lagoon.

We hike up to the closest higher point, and It took us around 3 hours in total to go up and come back, you need to check-in at the entrance of the park with the park ranger, they will give you a map and explanation about the trekking routes.

Take some snacks, water, a rain jacket, on the way you will have some of the best views ever.
